Since the beginning of time, cheese makers have utilized time-tested processes to obtain the flavor they desire for their finished product.  Now those methods are under fire by the Food and Drug Administration.

Part of the aging process includes the use of wooden cutting boards.  A round of citations by the Food and Drug Administration suggested that the process was harmful and left consumers open to listeria.

The cheese industry was quick to retort against the citations and now the FDA is back-peddling, with revised standards to be introduced soon.
