As the 2026 Minnesota State Fair gets closer, we're getting more glimpses at what to look forward to this year.

We've already gotten a look at all of the Grandstand performers as well as the extensive free entertainment lineup. Now it's time to get a look at the new foods and beverages to check out this year.

In all, the Minnesota State Fair will see 36 new foods and beverages making their debut at this year's great Minnesota Get-Together.

While there is a wide variety of different kinds of things to try, there is a bit of a trend with a few things being pickle-related.

Pickle-flavored things have been trending lately, and this year there are two pickle "desserts" joining the list of new foods. One of them is a pickle pie, and the other is a pickle cookie.

Aside from that, a few of the items that stand out to me as particularly delicious-sounding or quirky include Brandy Old Fashioned Cookie Dough, Jamaican Jerk Chicken Loaded Fries, something called "Tacos de Mole", a Dubai Whoopie Pie, and this one is just goofy and fun - a pretzel shaped like a mustache.

Joining the new foods and beverages roster are 9 new food and beverage vendors that will be at the fair for the first time this year.

This year's new vendors include:

dodopop - A beverage vendor specializing in dirty sodas, offering 6 different flavors.

Iemochi Japanese Confections - They'll serve Tanghulu (fruit skewered and coated in a hard candy shell) in four varieties.

Jive Turkey BBQ - They'll be serving up a variety of foods from their "Crack-n-Cheese Bowl" to varieties of stuffed turkey legs, barbecue sandwiches, and more.

El Taco Torro - Midtown Global Market's El Taco Torro serves Birria Crunch Bombs, Fairground Fiesta Tacos, and Horchata and Mangonada drinks but they're only there September 2 through September 7.

Minnesota's Original Apple Fries - As you'd guess by the name, this place will serve up varieties of apple fries.

Roon's Savories - This new vendor will serve up savory hand-rolled waffle cones that hold savory dishes like BBQ Pulled Pork Mac, Chicken Tinga & Rice, and Three Cheese Mac, among others.

Saturday Dumpling Co. - They will serve serves Chinese Sausage & Cheese Poppers, Ube Cheesecake Wontons, and Salted Mango Yuzuade.

Solem's French Fries - As the name would suggest, they'll feature fries! Their menu will include fresh-cut fries in four sizes with a dedicated sauce bar for dipping sauces plus beverages.

Summer Lakes Boat House - This new vendor will have a whole variety of food options like bacon-wrapped shrimp skewers, crispy chicken sandwiches; Riblets 'N' Chips, and the new "Dockside Poppers" in the new foods list below.

Each year, a lot of creative new foods and beverages make their debut at the Great Minnesota Get-Together. For 2026, 36 new items will be added to the lineup of offerings, with 9 new vendors making their debut this year at the fair. Here's a look at all of them!
