I recently started "baking" my bacon, instead of frying it.  It's not as messy, suppose to be healthier and gives me 15 minutes to get the rest of the meal prepared.  I have never tried baking my eggs in their shell, until now.  Here's my results.

I'm so excited!  This will make life easier, not just around Easter time, what a cool idea!  After carefully washing the eggs, place them in a mini-muffin pan if you have one, or a muffin tin, rather than a cookie sheet or cake pan to avoid rolling around.

Be sure to place the eggs on their side to bake, that way the yolk will stay in the middle, otherwise it would be at the bottom of your egg. Not a big deal, unless you like your world uniform, like I do.   Bake them in a pre-heated oven at 325 for 30 minutes. Oh, and they'll be HOT when you take them out of the oven, so use tongs.

Place them in ice water immediately after taking them out of the oven to stop them from baking any longer.  That will avoid the yolk getting that greenish tinge.  Again, not a big deal, it doesn't affect the taste and it's fine to eat, but if you're making deviled eggs, you want the filling to be bright yellow.

It really doesn't matter if you are doing 6, 12 or 24 eggs...time and temp are the same! The eggs were easier to peel too, with no sticking.  After cooled, they're ready to decorate for Easter, or just EAT!  This is definitely a kitchen technique I will use from now on!
